The day after Thanksgiving always seems to be equal parts “yay, more turkey!” and “oh no, more turkey!” If you don’t have an arsenal of creative ways to use your leftovers, you may get majorly tired of that delicious bird before you polish it off.
But before you chuck what’s left of your Thanksgiving feast, give this turkey salad a try. It’s a very, very simple recipe and really helps use up your turkey if you just can’t bring yourself to eat it as-is. Enjoy!
Ingredients
3 cups turkey (dark and white meat or whatever you’ve got), diced into small, bite-size pieces
1 heaping teaspoon fresh thyme
1 tablespoon plus 1 teaspoon Dijon mustard
3 tablespoons mayonnaise
¼ teaspoon black pepper
¼ teaspoon kosher salt
Directions
Combine all your ingredients in a bowl and mix well.
Serve with crackers, as a sandwich, or even open-faced with melted cheese as a Turkey Salad Melt!
