If you’re anything like us the day after Thanksgiving, the thought of food is…not so appealing? Nonetheless, the fridge is full of leftovers and you’ve got to do something with ’em. Our adviceL Keep it simple.
Turkey salad is great alone, for brunch, on sandwiches, etc. And it’s so easy to make. It’s also perfect for those who simply cannot look at another piece of turkey since it’s easily disguised as something else and can be sandwiched between bread.
Ingredients
3 cups turkey meat diced into small, bite-sized pieces
1 heaping teaspoon fresh thyme
1 tablespoon plus 1 teaspoon Dijon mustard
3 tablespoons mayonnaise
¼ teaspoon black pepper
¼ teaspoon kosher salt
8 slices bread
4 large lettuce pieces
Red onion rings (optional)
Tomatoes, thinly sliced (optional)
For Sandwiches:
Directions
This one’s super easy: combine the first six in a bowl. Mix well to form your turkey salad.
Build sandwiches with the remaining ingredients and the turkey salad. Enjoy!
