No arguing. Cheesesteak sandwiches are flat out the yummiest things since chocolate. That said, they can get up there in caloric value pretty quickly.
Let’s take those calories down a bit without sacrificing the flavor we love! In this recipe, we use super-lean beef and olive oil, in place of less-healthy butter, to lighten up this favorite just a bit...but not too much.
Ingredients
1 pound grass-fed rib eye (small end, lean only, trimmed to 0” fat)), thinly sliced*
1 yellow onion*, sliced
2 tablespoons Worcestershire Sauce
8 slices cheese*
4 Italian rolls or hoagies
2 tablespoons extra virgin olive oil
4 teaspoons homemade garlic aioli (see below)
2 egg yolks
1 tablespoon lemon juice
2–3 cloves garlic, blended to a paste
Extra virgin olive oil
1 pinch cayenne pepper

Directions
To Make Garlic Aioli
In a mixing bowl, combine the yolks with the lemon juice, cayenne pepper, and garlic paste.
Add in a drop of olive oil and whisk.
Continue to add in about a teaspoon of olive oil at a time while whisking until you reach a desired aioli consistency.
To Make Cheesesteak Sandwich
Combine meat and Worcestershire sauce in a Ziploc bag and shake so sauce coats the meat.
Spread your garlic aioli evenly on the insides of the rolls.
Sauté onions and all other vegetables until caramelized.
Grill or sauté the steak until it is cooked to your liking (we prefer medium-rare). Once cooked, place the cheese over the meat until slightly melted.
To assemble, divide the meat and cheese into four helpings. Place a roll over each helping and scoop the meat and cheese into the sandwich. Top with sautéed vegetables and serve.

Pro Tip 1:
While we like to make this recipe with rib eye, you can use any other cut of steak you prefer, such as filet mignon.
Pro Tip 2:
Peppers, mushrooms, or any other vegetable choice can be added atop the sandwich as well.
Pro Tip 3:
We like to use provolone or a white cheddar, but use what you prefer. You can even use a low fat or fat free cheese to cut the calories more.
