If you’ve been to New Mexico during chile season, you have a good understanding of how important these peppers are to New Mexican food culture. You can find them in everything from empanadas to pizza to ice cream—and each dish is more delicious than the last.
When tailgating in the great southwest (or anywhere else, for that matter), this burger is probably your best bet for experiencing chiles in full effect. Plan on making a batch of these mouthwatering burgers, because every other tailgater is going to want a bite!
Ingredients
3 ounces roasted Hatch chiles*
1 (5-ounce) beef patty
Salt, to taste
Black pepper, to taste
2 slices American cheese
1 hamburger bun
Mayonnaise, to taste
Directions
Turn your grill on high.
Season both sides of the burger patty with salt and pepper. Sear one side of the burger patty on the grill.
Flip the patty and top with the roasted chiles and cheese.
To build the burger, start by smearing some mayo on the insides of the bun. Add the patty with the chiles and cheese, cap, and devour!
Recipe Note
Pro Tip:
Roast 2–3 Hatch chilis in a 400 degree F oven for 10 minutes. Set aside to cool, then mince.
