If you’re a regular to our recipes, you know how much we love using seasonal fruits, especially those fruits that are only around for a few weeks each year. To that end, we created this delicious recipe using ripe peaches, the ultimate summer fruit. And what could go better with peaches in a main dish than pork?
These sliders are kind of a riff on classic teriyaki and pineapple burgers—a hearty protein complemented by a sweet, bright fruit flavor. And being in slider form, these little bites of happiness are perfect for summer backyard BBQs and family gatherings. So grab fresh peaches while you can, and get the pork grillin’!
Ingredients
4 pork chops
½–¾ large red onion, cut into ¼-inch rounds
2 fresh peaches, pits removed and sliced first into ½-inch rounds and then sliced into quarters
8 Hawaiian bread rolls, separated into tops and bottoms
8 medium-to-large basil leaves
Balsamic glaze, to taste
Directions
Prep you grill by lightly brushing the grates with oil before bringing up to medium heat.
Once at temperature, add your pork and onion rounds to the grill. The onions will cook up fairly quickly (about 6–8 minutes). Be sure to flip them over at least once. Remove onions from grill.
Grill your pork for approximately 6–10 minutes per side.
As your pork nears completion, add your buns, inside-side down, to the grill. Toast your buns until they have a nice char—but are not burned*. Remove from heat.
When the pork is finished cooking, remove from the grill. On a cutting board, carefully slice the chops into smaller pieces that will more easily fit atop your slider buns.
To build your slider, drizzle balsamic glaze on the bottom bun. Then top with grilled onions, a basil leaf, pork pieces, peach slices, and the top bun. Serve with additional balsamic glaze on the side. Enjoy!
Recipe Note
Pro Tip:
You can brush the bun insides and the top buns with a little extra virgin olive oil if you’d like. This will add a nice crisp.
