We love going out for a good breakfast on Sunday mornings. But when it's a game day weekend, we opt for the couch, watching the game and picnic-ing on the coffee table. These bacon and egg breakfast croissants are the perfect addition to your weekend game day couch party. Cheat day breakfast food at its best! Enjoy it with a bloody mary, and may the best team win!
Ingredients
1 package bacon
12 eggs
1 tablespoon butter
12 mini croissants, sliced in half (into top and bottom buns)
Salt, to taste
Black pepper, to taste
Cheese of choice (optional)
Avocado, sliced (optional)
Directions
Preheat your oven to 400 degrees F.
Place bacon slices on a parchment-paper-lined baking tray. Bake in the oven for 20 minutes, until crispy. Remove from the oven and set aside.
Melt the butter in a small skillet over medium-high heat. Crack your eggs into the skillet, careful not to break the yolks or overfill the pan (only add as many eggs as you can comfortably fit without them melding into one giant egg patty). Quickly fry the eggs, about 3–5 minutes per batch. Season with salt and pepper, to taste.
If you’re using cheese, melt the cheese onto the croissant in a toaster, oven, or microwave. To serve, sandwich your bacon and eggs in between the croissant halves and add avocado (if using).
