If you ask anyone from Texas which grocery store they shop at, you’ll find a pretty unanimous response: H-E-B. This isn’t an ad for H-E-B. It’s simply a fact. H-E-B is an institution in Texas. So we sampled some of HEB’s finest, including their barbecue sauce (a massive source of Texan pride).
We found ourselves partial to both H-E-B’s Specialty Series Barbecue Sauce and Salt Lick’s version. And then we took these barbecue flavors and revamped Mama Falk’s Meatloaf. We recommend serving this as-is or sandwiched between bread, topped with some extra barbecue sauce.
Ingredients
2 pounds ground sirloin
1 package Lipton Onion Soup mix
2 large eggs, slightly beaten
2 cups plain breadcrumbs
2 cups sharp cheddar, shredded or 5–6 squares sliced sharp cheddar cheese
6 slices bacon, parcooked (microwaved for about 2 ½ minutes)
Directions
Preheat your oven to 375 degrees F.
Combine the meat, soup mix, eggs, breadcrumbs, and ½ cup of the barbecue sauce in a bowl. Mix together well.
Place half the meat mixture in a 9x5-inch loaf pan. Cover the meat with a layer of bacon, followed by a layer of cheese, and then another layer of bacon. Then, add the rest of the meat mixture. Smooth the top with a spatula, then evenly spread the remaining barbecue sauce.
Bake for 45 minutes. Let rest for 10–15 minutes and serve with a small dollop of Better Than Good Bacon Jam.
Recipe Note
Pro Tip 1:
Don’t want to use the oven? Want to amp up the flavor? You can also grill or smoke the meatloaf to add an extra layer flavor. Place the meat mix in a cake pan. If using your grill, set it up for indirect heat and add some coals or use a smoking box for a gas grill.
