One of the best things about this great country of ours is that as you travel around it, you'll discover so many different ways to make barbecue sauce and rubs. One of our favorite riffs on barbecue hails from South Carolina, whose sauce is tangy like its North Carolina cousin, but the tang mostly comes from mustard, rather than vinegar. Don't get us wrong, South Carolina BBQ still has vinegar, but it's sweeter and in our opinion, it's one of the best ways to serve BBQ anywhere.

Memphis' barbecue style is pretty unique. While many places do sauce, Memphis does a dry rub. As implied by the word "rub," a tasty combination of seasonings literally gets rubbed into the protein to provide the quintessential Memphis barbecue flavor and texture. And in Memphis, there's nothing better to enjoy that dry rub on than a nice rack of ribs. We once had the best ribs just off Beale Street before heading into a club to watch B.B. King play. We once did a partnership with them that scored us a pretty handsome supply of their famous barbecue sauce. And hot dang is it tasty! 10. St. Louis Style Ribs

St. Louis Style Ribs

St Louis has enough barbecue street cred to literally have its own cut of ribs named for it. What's the difference between theirs and, say, baby back ribs, you ask? Excellent question. St. Louis' are meatier and are flatter than baby backs, which makes them easier to cook to a beautiful brown. And they're got just the right amount of fat on 'em to ensure they're always scrumptiously flavorful. While we're pretty proud of our barbecue sauce recipe in this dish, it's really the ribs that stand out.
