Game day has to be vegetarian-friendly too. Not everyone is game to chow down on meat and meat products. So for those of you who like your veggies, we bring you this healthy-ish, vegetarian take on barbecue chicken nuggets.
The main difference? These little guys are made with cauliflower! And for those of you who do eat meat, we think you’ll like these too! They’re succulent little morsels of veggie heaven.
Ingredients
1 head of cauliflower
Hungry Fan Barbecue Sauce (instructions on back of Hungry Fan Barbecue Spice Blend pouches)
1 cup flour
1 tablespoon Hungry Fan Barbecue Spice Blend
1 cup nut milk of choice
Ranch dressing, for dipping
Directions
Preheat your oven to 450 degrees F.
Line a baking sheet with parchment paper.
Wash and separate cauliflower into small–medium-sized pieces.
In a medium-sized mixing bowl, combine the milk, flour, and Hungry Fan Barbecue Spice Blend, mixing thoroughly.
Dredge each piece of cauliflower in the flour mixture before placing it on the baking sheet. Bake for 18 minutes, or until golden brown. Remove the cauliflower from the oven without turning oven off.
Smother the cauliflower in the Hungry Fan Barbecue Sauce, return the pieces to the baking sheet, and then bake for an additional 5 minutes.
Remove the cauliflower from the oven and plate alongside ranch or another dipping sauce of your choice. Serve!
