Oooooh pimento cheese dip, how we love thee. Us and, like, pretty much everyone in the entire American South. Oh, and also those who have visited the South and have had the great pleasure of tasting authentic and delicious pimento cheese.
This is a quintessential game day dish and is a breeze to make. There’s no cooking involved, just blending. So no matter what your kitchen setup or travel plans, this dip is ready to add pop to your party! Feel like mixing things up a bit? Ingredients
1 cup cheddar cheese, shredded
1 cup pepper jack cheese, shredded
4 ounces whipped cream cheese
3 tablespoons pimentos
Kosher salt, to taste
Freshly ground black pepper, to taste
½ cup Duke’s mayonnaise (or a mayo of your choice)
Crackers, for serving
Directions
Add everything, except for the mayo, into a food processor. Blend well.
Remove from the food processor and add the mixture into your serving dish. Gently fold in the mayo.
Serve crackers of your choice*.
Recipe Note
Pro Tip:
We, personally, love serving our pimento dip with Ritz crackers. But most good, savory crackers should work here.
