Spicing up your drumsticks for your taste buds’ pleasure…And who needs the hassle of flying to Greece when you could scoop up one of these puppies? Or a few if you’re anything like us. This recipe captures the flavor of the quintessential Greek gyro but on a drumstick. No forks or knives needed; this is pure game day finger food!
Ingredients
12 chicken drumsticks
1 cup white vinegar
1 cup salt
1 cup sugar
Freshly ground black pepper, to taste
Water
2 tablespoons dried oregano
2 tablespoons dried thyme
2 tablespoons dried parsley
2 tablespoons paprika
2 tablespoons salt
1 tablespoon ground cinnamon
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon ground nutmeg
1 teaspoon ground black pepper
1 pint Greek yogurt
2 Persian cucumbers, roughly chopped
Juice and zest of one lemon
1 tablespoon garlic powder
1 tablespoon canola oil or olive oil
Pinch of salt
Pinch of pepper

Directions
To Brine the Chicken
In a hotel pan, combine all the ingredients (save for the water) and the chicken drumsticks. Add water to fill the pan.
Cover with plastic and refrigerate overnight.
To Make the Tzatziki
Add the Greek yogurt to a bowl. Then, add the cucumbers, lemon juice, lemon zest, and garlic powder.
Mix in the oil and a pinch of salt and pepper. Stir well.
To Cook the Chicken
Wipe grill grates with a canola-oil-soaked paper towel. Turn grill on high.
Add drumsticks to the grill and sear for 10 minutes, making sure to grill all sides.
Transfer chicken over to a clean hotel pan and liberally coat with the gyro spice mixture. Place pan on grill, close the lid, and bake for another 10 minutes.
Serve with tzatziki sauce for dipping.
