Part of the excitement of March Madness is hosting watch parties. So, throughout the month of March every year, we offer up tasty March Madness-inspired recipes for throwing one hell of a party. This is one such snack we developed for basketball fans.
Whether or not it’s March, we think this slightly-fancy take on a go-to game day snack is something you’ll love. Below are three variations for toppings. Make one or make them all!
Ingredients
1 ⅔ cups water
2 teaspoons active dry or instant yeast (1 packet)
¼ cup olive oil
5 cups all-purpose flour
2 teaspoons salt
4 scallions
1 cup mozzarella cheese, shredded
½ teaspoon salt
½ teaspoon pepper
1 jalapeño, finely diced
½ cup kalamata olives, sliced
½ cup green olives, sliced
1 cup feta cheese
½ teaspoon salt
½ teaspoon pepper
1 cup cooked bacon
1 cup cheddar cheese
½ teaspoon salt
½ teaspoon pepper

Directions
To Make Flatbread
Mix the water and yeast together in the bowl of a stand mixer and let stand for a few minutes until the yeast dissolves.
Stir oil into the yeast mixture, then add the flour and salt. Mix with a spatula until a shaggy dough forms.
With a dough hook attached, turn the mixer on to low for 5 minutes, or knead by hand on the counter for 6–8 minutes. Your dough will form a smooth ball that springs slowly back when poked.
Cut the dough into 4 squares. Grease a baking pan with baking spray. Place the dough lumps in the pan and turn them over so they are coated with oil. Cover the pan with a damp kitchen towel and let the dough rise at room temperature until doubled in bulk, about 90 minutes.
Using a wine glass (yes, really!) cut flatbread into circles. Brush with olive oil and bake at 400 degrees F for 15 minutes, until golden brown. Top with your assorted toppings.
For Scallion Mozzarella Topping
Brush the flatbread with olive oil and top with ½ a sliced scallion, 1 tablespoon of mozzarella, 1 teaspoon of jalapeño, salt, and pepper.
For Olive and Feta Topping
Brush the flatbread with olive oil and top with kalamata olive, green olive, 1 tablespoon of feta, salt, and pepper.
For Cheesy Bacon Topping
Brush the flatbread with olive oil and top with 1 tablespoon of bacon, 1 tablespoon of cheddar, salt, and pepper.
