Bacon Pimento Dip
pimentos, garlic, cheddar cheese, cream cheese, mayonnaise, Tabasco sauce, cayenne pepper, onion powder, Hungry Fan Barbecue Spice Blend, bacon bits, cornbread
This is one of our many homages to the Carolinas, where our founder, Daina, spent a good chunk of her life. It’s pretty hard to travel through North or South Carolina without finding a good pimento cheese dip, so naturally we felt inclined to take on this southern favorite.
Here is our spin on the classic but kicked up a couple notches because...well, we don’t do basic here. This is a satisfying dish to snack on while cheering on your favorite Carolina team (or any other team, for that matter). And the best part? This dip is ready to serve in minutes.
1 (4-ounce) jar diced pimentos with juice
2 garlic cloves, minced
8 ounces sharp cheddar cheese, shredded
8 ounces cream cheese, softened
¼ cup mayonnaise
1 tablespoon pimento pepper juice
10–12 good shakes Tabasco Sauce, or more to taste
¼ teaspoon cayenne pepper
¼ teaspoon onion powder
1 teaspoonHungry Fan Barbecue Spice Blend
2 tablespoons bacon bits
Salt, to taste
Black pepper, to taste
Optional: ¼ cup cornbread crumbles*
In a large mixing bowl, combine all but the cornbread crumbles. Mix well.
Serve in a ramekin or serving bowl topped with the cornbread crumbles, if using them. Add a side of crackers, tortilla chips, vegetable crudité, or whatever you plan to dip into the cheese mix. Enjoy the big game!
Cornbread can be homemade or store-bought. Once cooked, crumble parts of the top and sprinkle atop the pimento cheese dip.
