As we head into our second month of lockdown, it's becoming clear that it's high time to cook through the mountains of dried pasta we've accumulated in our collective pantries. And pasta can be sooo much more than spaghetti and marinara sauce. (Don't get us wrong, there's a place in our hearts for that. But that can't be it or it'll get old…quick).

This recipe got its start from a request from our founder's sister, who is gluten-free. She loves store-bought pasta salad (especially the kind at the salad bar) but upon discovering her gluten sensitivity, her pasta salad days promptly ended. Thus arose an immediate need for this recipe, allowing her to make pasta salad at home. If you are also not down with the gluten, simply use gluten-free rotini (or pasta of your choice) instead.

That said, who couldn't use some comfort food right about now? So we're just indulging in moderation…
