Tumeric Rice Pilaf

This might seem like a complicated dish--and perhaps more elevated than you might imagine for game day. It's actually REALLY easy and it's quite delicious when paired with game-ier game day meats like lamb, venison, etc. (I'm talking to you folks who might even hunt your own game for your tailgate fare...I've tasted your venison meatballs...amazing). This dish is also really yummy on it's own and is a tasty gluten-free alternative to pasta salad for those looking for sides options...


  1. Soak rice for 2 hours in room temperature water
  2. Heat oil in medium skillet over medium to medium-high heat. Add in onions and garlic and cook, stirring often, until onions are translucent.
  3. Add in almonds, salt and pepper and toast over medium heat for 3 minutes, stirring well.
  4. Bring the rice to a boil in 4 ½ cups of water (or follow the instructions on the rice packaging) with 1 tsp of coconut oil, the cardamom and turmeric. Lower to a simmer and add in the pistachios and raisins. Cover and let cook for 20 minutes or until the rice is done.
  5. Season as needed with additional salt and pepper and serve!
