Peanut Butter Pumpkin Protein Balls

An alliterative and quite literal mouthful, these balls pack a punch! Tasty and healthy, and gluten-free/vegan-friendly, these balls make a great breakfast or mid-game/sideline snack.

Directions:

  1. Combine pumpkin purée, peanut butter, maple syrup, dates, spices, vanilla extract, and salt in a food processor or mixer.
  2. Blend until smooth. 
  3. Add the remaining ingredients and mix until thoroughly combined. 
  4. Refrigerate mixture for at least 15 minutes. 
  5. Roll into 1-inch balls and store in refrigerator. Enjoy!
