Geoff Schwartz's Jumbo Shrimp Pasta

NFL'er Geoff Schwartz is a self-proclaimed cuisine aficionado and enjoys eating out. But when it comes to pasta night, he's content to stay in and cook his favorite recipe. If you asked him what that is, he would tell you is his jumbo shrimp pasta. He’s been making this dish since he was 12.


  1. Fill a large pot with water and several shakes of salt. Bring to a boil. 
  2. As the water heats up, add olive oil into a large skillet over medium heat. 
  3. Once the oil is hot (it will become shiny), add in the garlic and shallots. Cook for one minute before adding in the tomatoes. Cook for 5 minutes. 
  4. Add into the skillet the butter and white wine and cook for another 3 minutes. 
  5. Add the shrimp, flipping occasionally. 
  6. Place the pasta into the boiling water. It should cook in 2-3 minutes. Remove from heat and strain. 
  7. Add the cooked pasta and fresh basil into the large skillet and mix well. Cook for 2-3 minutes. 
  8. Plate pasta and sprinkle with Parmesan cheese. Serve.
