It's Memorial Day Weekend and it's also the Coca-Cola 600 down in Charlotte, North Carolina. That means family time and NASCAR tailgating! Hungry yet?

How to have a porktastic, fantastic, and all around exciting weekend with the family as we kick off Summer 2017?


Step 1: If you're in Charlotte or are planning to be, hustle up and prep your tailgating gear for mobilization because you've got a race...or at least a tailgate...to attend. This Sunday, May 28th is the NASCAR Cup Series Coca-Cola 600 at Charlotte Motor Speedway and we are getting you ready!

If you're not in Charlotte, check your local listings for the race, invite your friends and family over for a holiday weekend get together and fire up the grill because we've got a tasty recipe to share while you watch!

We're proud to announce that we recently teamed up with Smithfield and they're a proud sponsor of the Richard Petty Motorsports Team, which is led by No. 43 Ford driver Aric Almirola. (Wishing Aric a quick recovery – our thoughts are with him and his family). With Smithfield and the Richard Petty Motorsports team, we've now got a partnership in racing + pork, which basically = tailgating heaven with a little sprinkle of game day magic. (Not to mention tasty game day recipes...keep reading).

Roasted Garlic and Maple Pork Hoagie with Smithfield Roasted Garlic and Cracked Pepper Pork Tenderloin

Step 2: Dust off that grill because summer's back, ya'll! That means it's time to get down to barbecuing and no better time to start than Memorial Day Weekend!

A sweet perk of our partnership with Smithfield is that we get to taste a whole bunch of yummy pork. (Our job is teeeerrrrrrible, wink wink). The first preparation of pork we got to taste was their Roasted Garlic and Cracked Pepper Pork Tenderloin. Here's why it's great: it's already slow-marinated for you and perfectly seasoned--all you have to do is cook it. That's where we come in--and truth be told, this pork is a cinch to cook so our part was actually pretty easy.

We came up with a tasty sub sandwich/hero/hoagie recipe. A sandwich by many names, indeed, but no matter how you slice it, it's always a fav! We were inspired by the fact that it's Memorial Day Weekend, which is often and aptly a time to kick back and relax with family, enjoying a nice brunch and togetherness. And if you're a NASCAR fan, enjoying the race this Sunday as well!

Our sandwich, the Roasted Garlic and Maple Pork Hoagie, features tasty pork tenderloin that grills up in under 10 minutes as well as flavors that are a small nod to the BR-eakfast part of BR-unch. (For our health-conscious "Conscious Fans", we also note the pork is made from 100% fresh pork and is packed with protein so you can kick off your weekend right)!

In the next few months, we'll continue our tasting of the wide array of Smithfield pork products, coming up with recipes to pair with other great holidays and more exciting NASCAR races, of course. We're going...wait for it...! hog wild !...(come on, we had to)...thinking about what's on tap.
